This calculator does not model a dehumidifier, room temperature, surface area, or airflow. It answers a narrower question: if honey starts at one water percentage and ends at a lower water percentage, how much mass must be lost as water if the non-water honey solids remain?
For 60 lb of honey at 19% moisture targeting 17%, the solids are 48.6 lb. The estimated final batch weight is about 58.55 lb, so about 1.45 lb of water must leave the batch.
What it does not tell you
It cannot predict how long drying will take or whether the entire batch is uniform. Re-mix and re-check the actual honey with a calibrated instrument.
When the target is higher than the starting moisture
Water removal alone cannot make honey wetter. If the target moisture is equal to or higher than the starting moisture, the calculator flags that condition rather than returning a misleading removal number.
